Concord Grape Pie
Peel 8 cups concord grapes. Set peels aside. (I used about four and it still worked well.)
Simmer grapes insides/seeds for 5-6 minutes.
Strain to get all seeds out.
In a bowl put cooked strained grape insides, 1 tbsp lemon juice, 3 tablespoons cornstarch, 1/2 cup maple syrup, zest of one small orange, and one pinch of salt.
Let this mixture sit for at least 1 hour.
Preheat oven to 400 degrees.
Make a pie crust on the side. Pour filling in. Cover with more crust. (Puncture top for steam to escape.)
Put in oven with a cookie sheet underneath to catch drippings.
Bake 400 degrees for 20 min. Then turn down oven temp.
350 degrees 45-50 min til lightly browned on top.
Cool before serving to allow pie to set.
