Asian Sesame Chicken Salad
This is a copycat of Panera's Asian Chicken Salad. No matter what toppings you use, this is delicious with its homemade dressing!
- DRESSING:
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 2 tablespoons canola oil
- 1 1/2 teaspoon sesame oil, toasted in a dry skillet over medium heat until
- golden brown
- 1/2 teaspoon salt and pepper
- 1/2 teaspoon sesame seeds, toasted
CHICKEN MARINADE
- 4 medium chicken breasts
- 3 tablespoons soy sauce
- 2 teaspoons brown sugar (or agave nectar, or honey)
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
-Cook chicken and slice.
-Stir dressing ingredients together.
-Put chicken and dressing on top of a salad of green lettuce, orange/mandarin slices, almond slices, and any other veggies desired. Optional wanton strips or sesame seeds.
