Chimichurri Veggies

Preheat oven to 425 degrees F.
Chop 1 large or two medium sweet potatoes into small cubes and place in bowl.
Toss sweet potatoes with 1 tablespoon olive oil, a sprinkle of salt and pepper, and cumin and corriander.
Spread sw. potatoes on caking sheet in a single layer. Roast alone for 15-18 minutes.
Dice red pepper, green pepper, and onions. Add to cooked sweet potatoes with another tablespoon of oil.
Return baking sheet to oven, roast 8-10 minutes.
Destem cilantro, chop. Sprinkle into cooked vegetables after they come out of the oven.
