Coconut Crack Bars

I usually avoid any recipes with the word "crack" in it. In fact, I think a recipe with that name automatically makes me queasy! But this recipe is quite full of good ingredients, and hits a huge nail on the head when sweetness is what you want. In fact, let's just say I am actually posting this recipe 20 minutes after first trying it. That never happens!

I will say, the recipe is really sweet. We will try half the maple syrup next time... guessing it will be just as good! In the meantime, we're cutting portions into small pieces, and enjoying every crumb slowly.

Ingredients

  • 1 cup unsweetened shredded coconut (80g)
  • 1/4 cup agave or pure maple syrup (or 1/4 cup water and stevia to taste)
  • 2 tbsp virgin coconut oil (For substitutions, see nutrition link below)
  • 1/2 tsp pure vanilla extract
  • 1/8 tsp salt
  • optional chocolate chips

Instructions

Combine all ingredients except chocoltae chips in a food processor. (Mixing by hand will still taste good, but the bars will crumble.) Squish into any small container–I used a 7×5– (no greasing needed) and if desired spread a thin layer of melted chocolate on to to hold these together better. Refrigerate for an hour before trying to cut. Or freeze for 15 minutes. Can be stored in the fridge or freezer, for at least a few weeks.
