Carrot Muffins, D-F, G-F, S-F
We love to eat these yummy muffins next to omelets or salads for pretty much any light meal!
Ingredients
- 1/2 Cup Coconut flour sifted (45g) *
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1 tsp Cinnamon
- 1/8 tsp Nutmeg
- 1/4 tsp Salt
- 3 Large eggs, at room temperature
- 2 Tbsp Coconut oil, melted
- 1/2 tsp Vanilla extract
- 3/4 Cup Coconut sugar, packed
- 1 1/4 Cups Grated carrots about 4 small carrots
350 degrees for 20-22 minutes. Usually makes 9-10 muffins for me!
