Grain-Free Dairy-Free Coconut Cupcakes
This is a small but delicious recipe! It is adapted from a low-sugar muffin recipe, so if you want super sweet cupcakes (which isn't really needed, since the frosting is so sweet!) you can always add more sugar. Yum!
3 eggs
2 TBSP melted coconut oil
1/3 cup sugar
1/4 tsp salt
1/4 tsp vanilla
1/4 tsp baking powder
1/4 cup coconut flour
400 degree oven, 15-20 min baking
Frosting:
When cooled, I mix together 1 cup of powdered sugar 1/4 tsp salt a few tablespoons of coconut oil or Nutiva and some coconut milk (a few tablespoons- add more or less to get the consistency you want) to make the frosting. After frosting the cupcakes, I dipped them in toasted coconut flakes for some texture and prettiness. Enjoy! : )
