African Trail Mix Muffins



These yummy muffins can be made without eggs, without dairy, or without nuts, depending on what you choose to put in! 

2 cups flour
1 cup brown sugar
2 tsp cinnamon
½ tsp salt
2 tsp baking soda (also called bicarbonate of soda)
1 tsp vanilla
1 cup shredded carrot
1 cup shredded apple (it’s okay to use the skin, too!)
1 cup oil –OR- ¾ cup oil and one egg –OR- 1/3 cup melted butter and 2 eggs
½ cup shredded coconut (sometimes this is called “desiccated coconut”)
1 cup raisins or diced dried fruit and ½ cup nuts –OR- 1 ½ cups of your favorite nut/seed/fruit trail mix –OR- keep these out if you have a nut allergy, as the muffins will still be delicious without them!


Mix all of these delicious ingredients together very well.
            Spoon into a greased or lined muffin pan.
            Bake at  375 degrees (180° C) for approximately 25 minutes or until
                     a fork stuck into the center of a muffin comes out clean.
Cool muffins before removing from pan.
