Zimbabwean Sweet Potato Thyme Pancakes
1/2 cup coconut, rice, or almond milk
1 tablespoons oil
1 1/4 cup gf flour
2 cups shredded (small and thin!) sweet potato
2 onions, thinly sliced and diced as small as possible
2 tsp dried thyme
salt and pepper to taste
Mix ingredients.
Cook in a hot skillet/griddle with a little oil, like regular pancakes.
Eat warm or cool.
