Old Pumpkin Bread Recipe
(This is
a huge recipe, so I often halve it...)
1 1/2 cups of sugar
1 cup of cooking oil
4 eggs
3 1/2 cups of all purpose flour or gf flour
2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2/3 cup water
one 15 oz can of pumpkin, or just slightly less than two cups of cooked, mashed pumpkin or butternut
(I also always add approx. 3/4 cup of raisins and 3/4 cup of nuts, preferably pecans)
Grease whatever pans you want to use and preheat oven to 350 degrees.
In a very large mixing bowl beat sugar, oil, and eggs.
In a different bowl combine flour, baking soda, salt, cinnamon, nutmeg.
Alternate between adding a little flour mixture and a little water to the sugar mixture until all is combined.
Beat in pumpkin, fold in nuts of raisins if you want, then spoon batter into pans.
bake 55-65 minutes for 2 loaves of bread
bake 25-30 minutes for muffins
