Maple Mustard Apple Salad


Maple mustard is a staple in many New England homes. The combination of maple with anything is good, but there are so many things to be done when it's paired with mustard! Here's a favorite:

Salad:
1 large Braeburn apple, thinly sliced
1 large Gala or Fuji apple, thinly sliced
1 large Granny Smith apple, thinly sliced
2 tablespoons of lemon juice
8 cups of mixed salad greens (wash and dry well)
1 small red onion, thinly sliced

Dressing:
2 Tbsp fresh orange juice
2 Tbsp fresh lemon juice
2 Tbsp Maple Mustard (or, if you don't have any, 1 Tbsp Honey Mustard and 1 tsp maple sugar or maple syrup)
1/4 cup walnut oil
sea salt and pepper to taste

Garnish (optional):
1/4 cup roasted pecan pieces
optional shredded cheese, craisins, or chicken

Coat the apples with the 2 Tbsp of lemon juice and set aside. Mix all dressing ingredients together. Toss apples into the salad greens and onions, top with optional pecans, ten drizzle with vinaigrette and serve immediately.
