Winter Salad
Dressing Ingredients:
1/4 cup maple syrup
3 Tbsp olive oil
2 Tbsp lemon juice
salt and pepper to taste
Salad Ingredients:
1 cup sliced almonds or some other nut if preferred
1 pound Brussel sprouts, trimmed, halved and thinly sliced- think shaved.
1 pound purple or curly kale (about 1 large bunch), leaves thinly sliced, thick center rib finely chopped (adds a little crunch)
1 large sweet, red apple, chopped
1 large tart, green apple, chopped
1/2 cup craisins
1 small onion, finely chopped
If desired, 1 cup of chopped chicken pieces
I like to let the dressing soak in for 15-30 minutes to slightly soften the kale, making it more nutritious because it's easier to digest. This is one of those rare salads I really like leftover the next day, too. The kale and sprouts stay crunchy instead of getting soggy, so it's great to take for a lunch! This makes a giant salad for a number of people, so we sometimes halve this.
