Favorite Zucchini Soup
Zucchini soup does not sound like anything that I would call a favorite, but this recipe has lasted with our family longer than almost any other. We love it! We have used it over and over where ever we've traveled, because the ingredients are healthily fresh, always available, and it is so so yummy! We love to serve this in bread bowls, or next to a crisp salad. Delish!
5 medium zucchini or tender yellow squash (I like the green for coloring and nutirents! Don't peel.)
3 large carrots (Keep those peels on- they're good for you!)
1 cup chopped onion
4 cups chicken stock/broth or vegetable broth
1 tsp salt
1/4 tsp pepper
Cut zucchini and carrots into 1 inch slices. Combine in a pot with onion and broth, then cover and bring to a boil. Reduce heat and simmer for 7 minutes. Cool ingredients slightly, then blend all in a blender (This is sometimes a messy hot process, but worth it- usually I have to juggle two blenders-worth.) Mix in the salt and pepper to start, and keep seasoning to taste.
My secret: We put this in a fondue pot and tell dairy-free Jonas that this is cheese fondue. He LOVES it!
