African Cilantro Salad


1 chicken de-boned, or approx. 2-3 cups of diced chicken
3/4 cup dried apricots, chopped
1/2 cup shelled, salted pistachios
1 bunch of cilantro, washed and coarsely chopped
2-3 tablespoons olive oil

Toss all ingredients together. Salt and pepper to taste.

*This is great with smoked chicken, or turkey, as well as good with a different dried fruit if needed
*We like to make this with Zimbabwean Sweet Potato Thyme Pancakes!
