All Corn (No Wheat) Corn Muffins


(makes six)

Ingredients

  • 1 egg
  • 1 c milk
  • 1/2 t salt
  • 2 T oil (or melted butter)
  • 1 c cornmeal
  • 1/4 c masa harina (OR1 1/4 cups masa harina and 1/4 cup cornmeal)
  • 1 t baking powder
  • butter or oil for muffin tins
  • optional: maple syrup on top of uncooked muffins or in batter for sweetening

Instructions

  1. Preheat oven to 425
  2. Beat the egg. Beat in milk, salt, and oil or butter.
  3. Mix cornmeal, masa harina, and baking powder. Stir quickly into liquid ingredients.
  4. Divide between 6 buttered muffin cups.
  5. Bake at 425 for 20 minutes.
