New England Waldorf Salad

 


There are all different versions of Waldorf salad, and its history is an interesting American tidbit! (Look it up!) But this Waldorf salad version is easy and quintessential New England style. Make this salad first, then refrigerate while preparing your other dishes. 


Salad

2 crisp red apples, cored, quartered, unpeeled and chopped into 1/2" pieces

2 ribs celery, trimmed and cut in 1" diagonal slices

1/2 cup pecans or walnuts (I like pecans!)

1/4 cup dried craisins, dries cherries, dried currants, or dried dates


Dressing (mix ingredients until smooth)

1 tablespoon lemon juice

1 tablespoon honey or agave nectar

2 tablespoons gf salad dressing, like mayo or Miracle Whip (May have to add a touch of salt if using mayo, which is my preference.)

Dash of salt


Pour dressing over salad mixture, toss to coat thoroughly. Use immediately, or within a few hours.
