Ding, Ding, Ding Pancakes

 


So our family has tried about five hundred pancake recipes. And this is no hyperbole. We have tried a ton. Eggless, flourless, no nuts, no dairy, no gluten, vegan, paleo, keto, you name it. The way into Jonas's food-loving heart involves pancakes so much that here is my portrait of us making pancakes on the kitchen floor. That, my friends, is real pancake love.

So our standards are high, and our needs are specific. Though I have fifteen pancake recipes on this blog alone, ding, ding, ding to lexiscleankitchen.com. This is our official, all-time favorite. It checks all our boxes.


INGREDIENTS

  • 2 eggs
  • 1/4 cup unsweetened applesauce or canned butternut
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (50 gramsalmond flour
  • 1/2 cup (60 gramstapioca flour
  • 1 teaspoon baking powder
  • pinch salt
  • 1/3 cup add-ins of choice (chocolate chips, blueberries, bananas)
  • butter or ghee or oil, for cooking

INSTRUCTIONS

  1. Add eggs, applesauce and extract to a bowl and whisk together. Add in the almond flour, tapioca, baking powder and pinch of salt and whisk together.
  2. Heat butter or oil in a nonstick skillet over medium heat. Once hot add 1/4 cup batter and drop in add-ins if using on to pancake batter.
  3. Let cook until golden brown, about 3 minutes, then flip and continue to cook for about 2 minutes until pancake is fully cooked.
  4. Continue with remaining batter.
  5. Serve pancakes with desired toppings and serve immediately.
