GF DF Herby Paleo Biscuits

We love making breakfast sandwiches out of these! Eggs, veggies, cheese, sausage, a drop of maple, whatever you want to add, these are great! (Though sometimes crumbly! Pack well on your baking sheet for the best results.)

INGREDIENTS

  • 1 cup | 120 grams tapioca flour
  • 1/4 cup + 3 tablespoons | 50 grams coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 egg, whisked or 1 flax/chia egg
  • 1/3 cup | 80 ml water
  • 1/3 cup | 80 ml olive oil, can sub with melted coconut oil

INSTRUCTIONS

  1. Preheat the oven to 350°F/175°C. Line or lightly grease a large baking sheet. Set aside.
  2. In a large bowl, whisk together the tapioca flour, coconut flour, baking powder, baking soda, salt, garlic powder and oregano.
  3. Stir in the  the already whisked egg followed by the oil and water. Mix to combine. The dough may be a little sticky at first but become easier to handle after a few minutes as the coconut flour soaks up the extra moisture. 
  4. Separate the dough into six pieces and roll into balls. Place on the prepared baking sheet leaving an inch or two in between each roll. 
  5. Bake for 18-20 minutes until the outside is lightly browned. Let cool a few minutes before serving and enjoy.

NOTES

  • Make It Egg Free: Use a chia or flax seed egg in place of the regular egg and reduce the amount of coconut flour by 2 tablespoons. 
  • To Make a Flax or Chia Egg: Mix 1 tablespoons ground flax or chia seeds with 2 tablespoons water. Stir and set aside about 10 minutes until the mixture gels up and then you're ready to use it. 
  • Grain Free Baking Powder: Baking powder typically has a little bit of corn starch in it making it technically not paleo. If you're interested in this recipe being strictly paleo/grain free you can make your own by mixing together by mixing together the ingredients below. You'll end up with 1/4 cup baking powder. You only need 1 teaspoon in this recipe but you can save the rest for more paleo baking. 
    • 2 tablespoons cream of tartar
    • 1 tablespoon baking soda
    • 1 tablespoon arrowroot starch
  • Freeze them:
    Once they are completely cooled, wrap them up tightly in plastic wrap, foil or add them to a freezer safe bag. These will keep for up to two month in the freezer. When you're ready to use them take them out to thaw. Heat the thawed biscuits in the microwave for about 20-30 seconds on high or warm up in the oven.
