Vegan Grain-Free Taco Pizza


Sure, you can add taco meat to this treat. But this vegan pizza stands on its own for taste, and is so packed with ingredients it's best with a fork and knife! 

We'll admit no two pizzas are alike; it's always a question of what is available in the fridge.  But our favorite quick and easy grain free crust is always the same.

CRUST: (Makes 2 medium-sized pizzas.)

3 cups tapioca flour/starch
3 Tablespoons olive oil
1/4 cup of water (add more if needed)
3 flax seed eggs (real eggs work, too, if you're not doing vegan)

Mix all ingredients together in a bowl. Dough is more of a thick oobleck (look it up-it's oozey!) rather than a fluffy dough.

Pressed a few millimeters thick on a greased cookie sheet, this goes into the oven WITH all of the ingredients on top. 400 degrees F.

Cook until pizza crust is just slightly starting to brown on the edges. The middle will be soft and chewy, but that's okay since there is no gooey cheese on the top!

*This is a good crust to use with any kind of pizza; sometimes we spread tomato paste on it; other times we put a sweet potato or pumpkin spread on, or simply leave it plain and drizzle a little olive or walnut oil on top. It's all good!

**For taco pizza, we smash a can of black beans (and a pinch of salt) on top or spread a can of refried beans on before layering it with black olives and sauteed onions. When it comes out of the oven, we pile on chopped lettuce, tomatoes, salsa, or crumbled-up non-gmo corn chips. Yum!
