Quinoa Breakfast Bowls


This is a go-to healthy breakfast option for us, especially when we have any leftover veggies already in the fridge. These bowls can be eaten warm, or this heavenly quinoa concoction can be made in bulk and refrigerated, to be eaten warm or cold later. Kurt and I like salt and pepper on our bowls; Jonas loves a small drizzle of maple syrup.

The possibilities are endless; here are some of the goodies we throw together in a pot with 4-6 cups of quinoa:


Our favorite combo:

sauteed onions
diced, cooked sweet potatoes
chopped, cooked kale
sausage
diced scrambled eggs


Other good options:

bacon
black beans
cooked zuchinni
diced tomatoes
any cooked greens
raw chopped kale
topped with a poached egg
