Carrot Muffins, D-F, G-F, S-F


We love to eat these yummy muffins next to omelets or salads for pretty much any light meal! 

Ingredients


  • 1/2 Cup Coconut flour sifted (45g) *
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1/4 tsp Salt
  • 3 Large eggs, at room temperature
  • 2 Tbsp Coconut oil, melted
  • 1/2 tsp Vanilla extract
  • 3/4 Cup Coconut sugar, packed
  • 1 1/4 Cups Grated carrots about 4 small carrots

350 degrees for 20-22 minutes. Usually makes 9-10 muffins for me!
