Casey's Corriander-Chicken Stuffed Sweet Potatoes



Ingredients

-- one can of black beans, drained
--2 tablespoons olive oil
-- cumin and coriander to taste (1/2 tsp and 1 tsp are a good start)
salt, to taste (3/4 tsp is a good start)
--2 med sized sweet potatoes, washed
--1 1/2 cups of shredded, already cooked chicken or turkey (This can be rotisserie chicken, leftover turkey after Thanksgiving, etc...)

Directions

1.Preheat oven to 400 degrees.

2.Slit sweet potatoes in half length-wise, cover in a pan, and cook for 45 min. or until tender.

3. While sweet potatoes are baking, combine chicken/turkey, beans, oil, cumin, coriander, and salt in a skillet. Cook over medium heat for 4-5 minutes, stirring frequently (but gently-don't mash beans!), until all contents are hot.

4. Top sweet potatoes with chicken mixture. Sprinkle evenly with cilantro. Serve immediately while hot. Enjoy!

(We sometimes also put cooked corn or sautéed onions into this- great additions!)
