Ginger Chicken-Mango Salad


Whisk together:

1 tablespoon lemon juice
1 tablespoon honey
 some grated ginger (to taste- maybe a few tsp)
1/4 cup olive oil


Toss with:

shredded or chopped grilled chicken (2-3 breasts worth)
Mesclun greens (1 serving bowl full= ~ 6 cups?)
2 mangos diced

Salt and pepper to taste!

Optional additions: sliced red onion, avocado
