French Stew with Shelled Beans


Ingredients

--Soft-shelled beans like lima beans, butter beans, or Kentucky pole beans (usually about 2 cups-we like these fresh from our garden or frozen in the freezer section)
--1 large onion, chopped
-- 1-1.5 lbs. of sausage
--salt
--water
--olive oil
--chopped tomatoes, approx. 4 cups
--fresh oregano approx 1/4 cup chopped or trimmed and torn


Directions

1. Cook beans for five minutes in a small amount of water, just to soften a bit.
2. In a separate pan, saute the onion and sausage on med. heat until the sausage is fully cooked and the onions are soft.
3. Add tomatoes and cook until simmering. (This cooks them down somewhat, but not entirely.)
4. Add beans and fresh oregano.
5. Add salt to season to taste.
