Salmon Burgers with DF Tzatziki Sauce


(recipe makes 4 patties)

-15.5 oz salmon (We use canned with skin/bones for this recipe- more affordable! I usually remove a bit of the skin that's included, but the bones break down aren't even detectable. Plus they're full of calcium!)
-2 eggs, beaten
-1 cup of breadcrumbs OR 3 Tbsp Ground Chia Seed or Flax Seed
- 1/4 cup chopped onion
-1 Tbsp lemon juice
-1/8 tsp pepper
-1/4 tsp salt

-1 cup coconut oil

Mix all ingredients except coconut oil into a medium bowl. Heat an iron skillet over medium heat, add oil. Add patties and cook 5 min per side. Set on paper towel to drain if desired. Delicious on a bun or on a bed of lettuce and tomato. We always serve with a large dollop of df Tzatziki Sauce:

-lemon juice
-minced cucumber
-minced garlic
-dill
-salt to taste
