Creamed Eggs on Toast


We like to eat this at Easter, as it uses a number of hard boiled eggs! The picture isn't very colorful, but this can look really beautiful when served next to some fruit and bacon/sausage.


> 1 1/2 c. coconut milk

> 3 tbsp. GF flour

> 1/2 tsp. salt or to taste, optional: pepper

> 2 tbsp. coconut oil or Nutiva

> 3 hard-boiled eggs

> 4 slices of toast

Put 1/2 cup of coconut milk and gf flour into a bowl and mix together.
Put 1 cup of milk into pan and heat.
Add the milk and flour mixture, as well and the salt and coconut oil/Nutiva.
Let mixture thicken while stirring.
Add finely chopped boiled white parts of eggs to mixture.
In a separate bowl, to be sprinkled on top, mash hard boiled yolks until they are a crumble.
Serve hot on toast.
