Turnip Greens


These are so not vegetarian or extremely healthy, but the best turnip greens we've ever had- a splurge! You can use other greens in this recipe (not collard-they need too long of a cooking time) but turnip have over and over been the best!

1 package no-nitrate bacon
4 medium onions, sliced (dice if you prefer)
2 very large bunches of turnip greens

-Cook one package of bacon until crispy in a large pot on the stove top..

-Remove bacon and drain on a paper towel. Keep the grease hot in the bottom of the pot.

-Dump all onions into the pot; cook until soft and browned.

-Put greens into the pot and cook down with the onions. When all are cooked, remove pot from heat.

-Crumple bacon into the dish. Salt and pepper to taste. The onions add a lot of sweet flavor, so a lot of salt is not needed.
