Spiced Maple Butternut/Pumpkin Seeds


Ingredients
  • 1 cup(ish) raw pumpkin or butternut seeds
  • 1/2 Tbsp teaspoon melted coconut oil
  • 2 tablespoons pure maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon kosher salt
Instructions
  1. Preheat oven to 250 degrees F.
  2. Place the pumpkin seeds on a baking sheet, toss with the melted coconut oil, maple, and salt/spices and spread them out as evenly as possible. Roast for 20 minutes on the bottom rack of the oven until almost dry and just starting to turn light brown. Can take longer, according to desired crispiness.
  3. Cool for 15 minutes.

Note: The seeds will seem a little soft and sticky when you pull them out of the oven but will harden as they cool.
