Zimbabwean Chicken Salad



1. Crush/food process ½ cup of peanuts into small pieces
2. Mix with about a tablespoon of olive oil
3. Salt this to taste- Should be like a slightly salty peanut butter taste.
4. Then gently mix peanut mixture with the ingredients below:

2 Bananas, sliced into ½ “ circles
1 cubed chicken breast, cooked and cooled
1 small handful of fresh, chopped cilantro

(If you don’t like cilantro, this is good with fresh baby spinach leaves, too.)
