(Not Fried) Fried Riced Cauliflower

Fast, cheap, and super healthy dinner!

2 bags of riced cauliflower
3/4 cup frozen corn
3/4 cup frozen sweet peas/baby peas
3/4 cup frozen or fresh carrots
2 scrambled eggs, chopped
4 Tblsp chicken gelatin (optional, chicken fat just adds an extra layer of flavor)
salt and pepper to taste

Cook riced cauliflower in large pot (follow package directions- usually approx. 5-6 min) on medium heat.

In a separate pan, cook corn, peas, and carrots in one inch of water. Boil until tender, then drain.

In the large cauliflower pot, mix in chicken gelatin, then add cooked veggies and scrambled eggs. Salt and pepper to taste.
