Grapefruit Spinach Salad


6 cups baby spinach, well washed
1 pink grapefruit, peeled and separated, then slightly chopped to make pieces about 1- 1/2 inches long
3/4 cup salted raw or roasted cashews (crumble a little so they are not whole chunks)
Combine all ingredients, then drizzle with a small amount of olive oil.

(We need this salad to be dairy free, but if you don't, it's great with a few Tbsp of feta and sunflower seeds in place of the cashews. )
