Butter Bean Tomato Soup



salt and pepper to taste
2- 14 oz BPA free cans of butter beans (or lima beans)
3 3/4 cup chicken stock
4 Tbsp tomato paste
5 Tbsp dairy-free pesto (indented here)
      • 2 packed cups basil leaves
      • ½ cup roasted, unsalted pecans or almonds
      • 3 cloves of garlic
      • ½ teaspoon salt
      • ½ teaspoon pepper
      • ½ cup + 2 tablespoons olive oil
Cook to a gentle boil, then blend smooth in a blender or food processer until smooth. Pesto can be sprinkled on top for looks.
